When I download a map to my Garmin I see many choppy roads.
But on OSM the lines look very round or soft curves.
Why is this?

What type of Garmin do you have? And there are many OSM maps out there to download. Which one do you use?
With this information there is a better chance to get an answer to your question.

I have been using

to download my maps for my Garmin 750
They look great , but one problem
I make very nice round curves,bends and roundabouts in the road .
Then when I download the maps the curves, bends and roundabouts are all choppy and crooked on the gramin map. I have also noted that some of the changes I have made weeks ago on OSM (and can be seen on OSM now) do not show up on the download while other more recent change do appear.
What's up with that??

Maybe you'll take some time to read this (it's a lot) and then post your question there. A link (permalink) to "choppy" displayed roads and/or to unvisible data will help. Maybe you can make a screenshot of your garmin display (ximage from Garmin, I think).

I asked myself the same question. Is the rendering on garmin devices, like my etrex vista hcx, depending on the garmin renderer or can it be changed by the osm maps on it (type files?). Streets look really ugly and ideally I'd like to have mapnik on my device, but thats probably not possible.
