Alright.
The correct way to tag a permanently-business is to use a lifecycle prefix "disused:" as documented in osm.wiki/Lifecycle_prefix
Essentially you'd change amenity=cafe into disused:amenity=cafe (and remove closed=yes tag).

Alternatively, and less preferred way, is to simply delete everything biz-related from this node, but leave addr: tags in place. Doing that at least allows that address to still be searchable/routable, and preserves history of that node/object if there's ever a need to refer to it in the future.

If you'd like to try to map things while you are out and about, for Android there's an app called StreetComplete. It asks you simple questions about features that are missing certain information and it takes care of all the correct tags.

Additionally, there's app EveryDoor. It's for both Android and iOS. It's specifically designed for editing POI such as businesses. Allows you to simply fill in relevant fields and it takes care of all the tags. It also has as single button to tag a biz as closed.

Alright. But street imagery and NYC's official streets map(https://streets.planning.nyc.gov) doesn't show that this is this way's name.
Generally driveways don't have a name.

Please note, as documented in cycleway=* the way you mapped this bike lane is incorrect.
Since this is simply a painted bike lane with no physical separation from the road, it must be mapped as appropriate tags on the road way itself.

Also please note that it is INCORRECT to tag the whole building as a business if that business occupies only a part of that building. In cases like this such business MUST be tagged as a separate node.

Primary goal is NOT routing. Routing is one of many different use-cases of OSM database, all of them are equally viable and important.
Just because the surface is the same doesn't mean it's classified the same way.
There are footpaths that are actually paved with asphalt, but you don't tag them as roads.

It's not about consistency. It's about *accurate* tagging.
Just because other areas are incorrectly tagged doesn't mean you should do that as well "for consistency". Incorrect tagging should be fixed, not spread further.

Could you please elaborate why did you tag so many footpaths that do not go along existing streets as sidewalks?
Not every footpath is a sidewalk. Footpaths that go along parking lots shouldn't be tagged as sidewalks.
