Its recommended, but not necessary to add a comment for closing time like:

opening_hours= 01:00-sunset+ "Closes when event finishes."

Open from 10:00 to 20:00, but closes when a event is finished.

Note: Comments can be anything, there is no specific rule to them.

Weekday

Remember that weekdays are abbreviated to 2 letters as follows:

Abbr. Day of week
Mo Monday
Tu Tuesday
We Wednesday
Th Thursday
Fr Friday
Sa Saturday
Su Sunday

Basic

opening_hours= Tu

Is open every Tuesday the whole day.

opening_hours= Mo-Th

Is open the whole day from Monday to Thursday only. The other days are assumed closed.

Alternatively you can do

opening_hours= Mo-Th open; Fr-Su closed

Is open the whole day from Monday to Thursday only and from Friday to Sunday

While its not needed, it can help other mappers understand that there is no missing information and that the hours are completely tagged.

opening_hours= Mo closed; We-Th open; Fr-Su closed

Is open the whole day from Wednesday to Thursday only. The rest of the days are closed.

With time

opening_hours= Sa [time]

Open on monday from within user inputted time.

This is the general format of the time a place is open for a specific weekday. In this case, Saturday.

opening_hours= Tu 10:00-12:00

Is open from 10:00-12:00 on every Tuesday. The rest of the days are assumed closed.

opening_hours= Mo closed; Tu-We 02:00-05:00; Th-Fr 03:00-05:00; Sa-Su open

Monday is closed. Tuesday to Wednesday is open from 2:00-5:00. Thursday to Friday is open from 3:00-5:00. Saturday and Sunday is open the whole day.

Here you can see multiple weekdays have different times, they are separated using the rule separator ";".

This is the most common tagging of poi's. As most of them don't have that much complex hour tagging.
