This tag is used to map the large structural support structures for supporting the roller coaster track.
How to map
Draw the way 
of the roller support structure and add roller_coaster=support.
One end of the way should be connected to the track, the other side should be on the ground.
Therefore a roller_coaster=support way can never be connected to nothing.
