You customise the style using "TYP" files. I've found this a good place to start: http://www.cferrero.net/maps/guide_to_TYPs.html

Map Style in garmin maps can be changed by means of a TYP-File. Different Garmin Maps use very different TYP-Files. osm.wiki/OSM_Map_On_Garmin osm.wiki/All_in_one_Garmin_Map

Thanks for your answers. I'm already using downloaded maps and just wondering if there's a way to display the map a bit nicer.

There is a Mapnik look alike type created by a Frenchman.
Just be aware, that although it may look 'pretty' on Mapsource you will need to tweak the typ file for your Garmin by discarding some highway borders.
