I would like there to be a special key or convention for toll roads like Bing uses, or at least Google Maps.
Also it would be good if OpenStreetMap itself was customisable.

It is! The maps that you see on osm.org are only a few of the different ways of showing the data.
Lots of companies actually use OSM data to create their own maps (including Bing, actually - though what gets used in different places in the world probably varies).
You can also create your own maps based on OSM data as well.

What language do you want to see? Roads only? What style of map? Do you want to see public transport? Do you want to see bicycle/hiking routes ?
The possibilities are very large… OSM has lots avalible for renders to chose what they want to show on their maps.
