The tags on OSM objects all mean things that the community has agreed to, and these tags are used by real apps. Removing amenity=post_box means it's not a post box anymore! The name= key also has its own rules: osm.wiki/Names#Good_practice

Thanks for confirming you didn't use Streetview! When saving a changeset, you can specify how you got the information in the "sources" field. "Local knowledge" would be the one you would want in this case. Specifying your sources like this will help avoid confusion in the future.

Welcome to OSM and thanks for contributing! Please note that copying from Google Maps, including Google Streetview, is illegal. The built-in web editor iD has a number of permissible options for street-level imagery, including Bing Streetside and Mapillary, in the "imagery" panel on the right side.

When a business has moved out, it's better to just remove the tags that are no longer applicable, instead of deleting the node entirely, so that useful information like the address doesn't have to be re-added. The web editor iD has a shortcut called "downgrade" that does that automatically.

The "name=" key needs to exactly match what the place is actually called and have no additional descriptions. There are other ways to disambiguate, including the "operator=" tag. See osm.wiki/Names#Name_is_the_name_only

When a restaurant or shop closes, it's better to just remove the tags that are no longer relevant, than to delete the node entirely. The address still exists at that location, even if there isn't a restaurant there.

The office is still there, it just isn't generally open to the public, or requires an appointment. disused:office= means there's no office there at all anymore.
