I am hoping to bicycle from France to the Alpujarra Mountains (between Malaga and Seville, Spain) with my small baby in August. I want to go a very safe route (safe from cars) since I am traveling with a baby. I am wondering if anyone has any advice for such a journey? If I cannot find a safe route, I will fly... however, if I bicycle, I will be returning to Amsterdam so also a return route is appreciated. Does anyone have any information?

I don't know how well the quality of the maps is in spain and France (north France is not so good I know) but if the quality is good, you can use a routing engine like cloudmate maps. The router is based on OSM data and it knows the difference between cycle paths and highways.
But I fear the data is not good in south Europe. The Netherlands and Germany are very good mapped and Belgium is following.
