home made or industrial?
I suggest to use subtagging to differentiate between home made ice cream and industrial one. This could be done with the ice_cream-tag:
ice_cream=industrial, ice_cream=artisanal and could be used for amenity=cafe as well as for other ways of tagging ice cream parlors. -- Dieterdreist 15:15, 1 September 2010 (BST)

- Yeah nowadays it would definitely be added under the shop key. Just legacy reasons. I think it's a very old tag (documented in Map Features a lot longer than the age of this page... since the early days I think) -- Harry Wood (talk) 14:34, 9 April 2015 (UTC)

Regarding your deletion of cuisine=ice_cream + amenity=...
Jeisenbe, I don't agree with your deletion in your edit where you give the following reasoning.
Remove "An alternative approach for tagging the same thing would be to tag it withcuisine=ice_cream, together withamenity=fast_foodoramenity=cafe. " - this is not common.)
However, according to TagInfo, cuisine=ice_cream is pretty much widespread, up to 12K occurrences. So documenting it would be warranted. -Bkil (talk) 10:55, 28 June 2020 (UTC)
- Certainly cuisine=ice_cream should be documented at Tag:cuisine=ice_cream and I would recommend creating that page: it is already mentioned on Key:cuisine. However that tag has been used over 3000 times with
amenity=ice_cream, as well as withamenity=cafeandamenity=fast_food([taginfo https://taginfo.openstreetmap.org/search?q=cuisine%3Dice_cream]), soamenity=ice_creamis several times more common. --Jeisenbe (talk) 20:57, 6 July 2020 (UTC)- It's pretty clear that

Italian Ice vs. Ice Cream
The iD editor by default tags Italian Ice shops as amenity=ice_cream. [Currently 3 shops (i) Jeremiah's Italian Ice (ii) Ralph's Italian Ices and (iii) Rita's Italian Ice are suggested] Italian Ice, in some regional dialects called "water ice" (https://en.wikipedia.org/wiki/Italian_ice) is an entirely different dessert than ice cream. It contains no dairy - a key distinction. While I appreciate that most dedicated Italian Ice merchants will have some hit of "italian ice" in their name=* field, I personally see merit in there being a separate tag for italian ice.
